Paris–Brest choux pastries main ingredients consist of milk, eggs, butter, and flour. The texture is somewhat on the crunchy side compared to Eclair. Traditional Paris–Brest’s filling usually along the line of praline mousseline. A blend of caramelized hazelnuts, almonds and sugar added to buttered pastry cream. We prefer a lighter contemporary filling. More distinctive flavours are on the way.
